dough cakes A general term to include crumpets, muffins, and pikelets, all made from batter raised with yeast and baked on a hot plate or griddle (hence sometimes known as griddle cakes). Crumpets have sodium bicarbonate added to the batter; muffins are thick and well aerated, less tough than crumpets; pikelets are made from thinned crumpet batter.
